What kinds of vegetables can I grow during the wintertime?

While crops generally grow best during the warm months, there are still some vegetables you can grow when cold weather arrives. If you plan on doing some winter gardening, it’s very important that you pick the right kinds of crops that are capable of enduring freezing temperatures. Here’s a look at five types of vegetables you can grow during the winter months.
Spinach
Gardeners love spinach because you can keep cutting its leaves and they’ll keep growing right back. Well-established spinach plants can tolerate temperatures down into the teens, and can provide you with nourishing salads when most plants are dormant. You can sow it in the fall and then harvest throughout the winter.
Kale
Kale is very cold tolerant and the most hardy varieties can tolerate temperatures down to -10 degrees. It’s great for hot vegetable soups to warm you up on cold winter days, and also provides lots of vitamins A, C, and B6.
Fava Beans
Also known as broad beans, fava beans are known to tolerate temperatures as low as 14 degrees. And they can help you get important nutrients through the winter months because they’re packed with protein, iron, potassium, and fiber.
Garlic
While you won’t actually harvest your garlic during the wintertime, you can grow it over the winter so that it’s ready to eat by late spring to mid-summer. Planting is best done in October/November.
Carrots
You can sow carrots in late summer for a winter harvest. It’s a good idea to deeply mulch the carrots in late fall/early winter for added insulation. Carrots are known for getting extra sweet after a few frosts.
